This recipe for Brinjal Bharta is from the Konkani Chitrapur Saraswat community. It is used as a side dish and has a distinct flavour that is brought about by roasting the eggplant directly over fire.

Ingredients:
Brinjal - 1, large
Red onion - 1, medium
Coriander leaves - 1/2 cup
Green chillies - 2
Lime - 1
Salt as per taste
Method:
Roast the brinjal on an open flame rotating it slowly until the skin is completely charred.
Peel the skin off the brinjal completely and mash it to pulp.
Dice the onions, green chillies, and chop the coriander leaves roughly. Juice the lime.
Mix all the ingredients in a bowl and season with salt.
Serve hot or cold with roti or even as a dip along with chips.
