Rajasthani Cuisine, belonging to the rugged Rajasthan region in North-West India is influenced both by the lifestyle of its inhabitants and the availability of ingredients in its arid region. The scarcity of water and fresh green vegetables has an effect on the cooking as well. Hence, food that can be stored for days is preferred. Some famous snacks from this region are Bikaneri Bhujia, Mirchi Vada and Pyaz ki Kachori. Other well-known dishes include Dal Baati, Malaidaar Lassi, Lahsun ki Chutney, sweets like Ghewar, Malpua, Mawa Kachori, Moong Dal Halwa and Doodhiya Kheench. According to a 2014 survey released by the registrar general of India, Rajasthan has 74.9% vegetarians, which makes it the most vegetarian state in India. There are also communities like the Rajput Community who prefer majorly a non-vegetarian diet.
