Andhra Style Jackfruit Curry

Panasa Pottu Koora is a delectable dish featuring shredded raw jackfruit simmered in a flavorful mustard masala, a classic preparation from Andhra cuisine.


In Telugu, shredded or grated raw jackfruit is known as Panasa Pottu. Traditionally, the process of shredding raw jackfruit is quite intricate, involving a special knife that is used explicitly for finely chopping the jackfruit. During jackfruit season, this is a staple in the weddings of Andhra Brahmins.


Panasa Pottu Koora can be served alongside steamed rice and Sambar.

Ingredients:

  1. One medium-sized jackfruit

  2. 5-6 cups of water

  3. Turmeric Powder

  4. 2 tbsp Urad Dal

  5. 2 tbsp Chana Dal

  6. 6-8 slit green chillies

  7. Handful of curry leaves

  8. Handful of cashews (optional)

  9. 4-5 tbsp mustard seeds

  10. Thick tamarind paste (extracted from coin-sized tamarind)

  11. Oil

  12. Salt (to taste)

Preparation Process:

Jackfruit:

  • Peel the skin of the raw jackfruit and chop it into pieces.

  • In a blender, add the chopped jackfruit, a pinch of turmeric, and 1-2 tbsp oil. Blend into a fine powder (this is an easy hack to get finely grated jackfruit).

  • Add 5 cups of water and 2 cups of the finely grated jackfruit to a pot. Cover and cook for 20 minutes.

  • Drain all the water and squeeze out any remaining water. The cooked raw jackfruit is ready.


Mustard Masala (Ava Pindi):

  • Add mustard seeds to a blender and blend into a fine powder.

  • Add 2-3 tbsp water to the powder and make a fine paste.


The Curry:

  • In a pan, heat 1/3 cup oil. Add Urad dal and Chana dal, and fry until golden brown.

  • Add a pinch of turmeric, slit green chilis, and a handful of curry leaves. Fry for 2-3 minutes.

  • (Optional) Add a handful of cashews and fry until they change colour.

  • Add the cooked raw jackfruit and salt to taste. Mix well.

  • Add the prepared mustard paste and thick tamarind paste. Mix well and cook for 5 minutes.
