Pachai Manga Pachadi or Raw Mango Pachadi is a sweet, tangy and chunky mango chutney that is prominently made using raw mango in a jaggery syrup along with some spices. This dish is prepared during special occasions like Tamil New Year, weddings and some major festivals. Mango Pachadi goes well with a variety of dishes like dosa, chapati, rice, adai or cheela.

Ingredients:
2 Raw Mangos- peeled and cut into small pieces
Jaggery
Red chilli powder
Turmeric powder
Salt
Mustard seeds
Cumin seeds
Curry leaves
1 Red chilli (according to one's taste)
For Seasoning/ Tadka
1/2 teaspoon Mustard seeds (Rai/ Kadugu)
1/2 teaspoon Cumin seeds (Jeera)
1 sprig Curry leaves, torn
2 Dry Red Chillies, broken into half
1 tablespoon Gingelly oil
Recipe:
Prepare the mangoes.
Peel the raw mangoes and cut them into even pieces, approximately 2 to 2.5 cm in size.
Cook the mangoes.
Place the mango pieces in a heavy-bottomed saucepan. Add 3/4 cup water, turmeric powder, red chilli powder, and salt.
Bring to a gentle boil, cover, and cook over medium-low heat for 6 to 8 minutes. Stir once or twice during cooking.
The mango should be tender when pierced but should still hold its shape. Avoid cooking it until it becomes mushy.
Prepare the jaggery syrup.
Place the jaggery in a small saucepan with the remaining 1/4 cup water. Heat gently until the jaggery has completely dissolved. If the jaggery contains visible impurities, strain the syrup before using it.
Add the jaggery.
Once the mango is almost fully cooked, pour the jaggery syrup into the saucepan. Stir gently to combine without breaking the mango pieces.
Simmer the pachadi.
Cook uncovered over low to medium-low heat for 8 to 10 minutes, stirring occasionally.
The liquid should reduce slightly and become glossy, while the mango pieces remain visible and intact. The finished pachadi should be thick enough to coat the mango but still have a spoonable, lightly flowing consistency.
If it becomes too thick while cooking, add 1 to 2 tablespoons of water at a time until the desired consistency is reached.
Prepare the seasoning.
Heat the gingelly oil in a small pan over medium heat.
Add the mustard seeds and allow them to splutter. Add the cumin seeds and cook for a few seconds, then add the broken dry red chillies and curry leaves. Fry for approximately 15 to 20 seconds, until aromatic.
Finish the pachadi.
Pour the hot seasoning immediately over the mango and jaggery mixture. Stir gently to distribute the seasoning.
Rest before serving.
Allow the pachadi to rest for about 10 minutes before serving. The sauce will thicken slightly as it cools.
Notes:
The final taste should balance sour, sweet, mildly hot, and lightly spiced flavours.
If the mangoes are very sour, increase the jaggery to 170-180 g.
If the mangoes are less sour, 130-150 g of jaggery is usually enough.
Do not overcook the mangoes, as they should remain in soft pieces rather than turning mushy.
